Ingredients

  • 300g (1 packet) Quorn Chicken Style Pieces
  • 400g Stir-fry vegetables, e.g. Sliced mixed peppers, mange tout, baby corn, asparagus
  • 1 onion, sliced

Marinade

  • 6 tbsp (90ml) fresh orange juice
  • 2 tbsp (30ml) dry sherry (optional)
  • 1 tbsp (15ml) reduced sodium dark soy sauce
  • 1 tbsp (15ml) white wine vinegar
  • 1 tbsp (15ml) honey
  • 4 tsp (20ml) sesame oil
  • 1 clove garlic

Sweet and Sour sauce:

  • 100ml homemade vegetable stock
  • 2 star anise
  • 1 tbsp (15ml) reduced sodium soy sauce
  • 1 tbsp (15ml) tomato ketchup
  • 4 tbsp (60ml) brown sugar
  • 3 tbsp (45ml) white vinegar
  • 2 tsp (10ml) cornflour dissolved in 4 tsp (20ml) cold water

Garnish

  • 2 Spring onions, finely sliced
