  • 2 tomatoes, diced
  • ½ small red onion, finely diced
  • 225g cooked Beetroot, drained and sliced into thin matchsticks
  • 1 tbsp (15ml) lemon juice
  • salt and freshly ground pepper
  • 1 tbsp (15ml) fresh coriander leaves
  • 1 cup (250ml) fresh rocket leaves
