  • 1 tbsp (15ml) olive oil
  • 1 tbsp (15ml) Dried herb blend
  • Low calorie cooking spray
  • 2 cloves of Garlic finely chopped
  • 1 large Onion finely chopped
  • 2 medium Courgettes sliced
  • 1 each red, green, yellow Peppers deseeded and cut into wide strips
  • 400g tin chopped Tomatoes
  • 2 tbsp (30ml) fresh Parsley chopped
  • Freshly ground black pepper
