  • 4 tsp (20ml) olive oil
  • 1 onion, chopped
  • 1 tbsp (15ml) crushed garlic
  • 2 tbsp (30ml) crushed ginger
  • 3 tbsp (45ml) Durban masala or Red curry powder
  • 2 tsp (10ml) garam masala
  • 1 tsp (5ml) ground cumin
  • 4 cardamom seeds
  • 1 cup (250ml) chopped tomatoes
  • 1 - 2 cups (250 - 500ml) water
  • 4 parboiled potatoes, each cut into 4 pieces
  • 250g frozen peas
  • Fresh Coriander to garnish
